INGREDIENTS

      CRUST:

  • ½ cup oat flour
  • 1 egg
  • 2-3 tbsp of water

      SAUCE:

  • ¼ cup boiled red bell pepper, seeds removed
  • ¼ cup boiled orange bell pepper, seeds removed

      TOPPINGS:

  • ¼ cup boiled, shredded chicken breast
  • 2 tbsp boiled and blended sweet potato
  • 1-2 tbsp raw green bell pepper, seeds removed and thinly sliced
  • 1-2 tbsp grated Parmesan cheese

      FINISH:

PREP

  1. Preheat oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. Remove all seeds from red, orange, and green bell peppers before boiling or slicing.
  4. Ensure chicken and sweet potato are fully cooked and cooled before assembling.

STEPS

  1. In a bowl, mix oat flour, egg, and 2 tablespoons water until a dough forms. Add additional water if needed to create a workable consistency.
  2. Press dough into a 6 to 7 inch circle on the prepared baking sheet.

3. Bake crust at 350°F for 8 to 10 minutes, until set and lightly firm.

4. Increase oven temperature to 400°F.

5. Blend boiled, seedless red and orange bell peppers until smooth to create the sauce.

6. Spread a thin layer of sauce over the baked crust.

7. Mix shredded chicken with blended sweet potato until evenly coated.

8. Spread chicken mixture over the sauce.

9. Top with thin slices of raw, seedless green bell pepper and grated Parmesan.

10. Bake at 400°F for 5 minutes, just until heated through and cheese softens slightly.

 

Cool completely before serving.
