INGREDIENTS

  • 1 cup raw ground turkey
  • ¼ cup pumpkin purée (plain, unsweetened)
  • ¼ cup mashed sweet potato (plain)
  • ½ cup all purpose flour or oat flour
  • 1 egg
  • 1 tsp Kodiak Naturals Salmon Oil

      OPTIONAL:

  • 1-2 tbsp additional pumpkin purée for topping

PREP

  1. Preheat oven to 350°F.

2. Line a muffin tin with cupcake liners or lightly grease each cavity.
3. Make sure sweet potato is fully cooked and mashed smooth before measuring.

STEPS

  1. In a large bowl, combine ground turkey, pumpkin purée, mashed sweet potato, flour, egg, and 1 teaspoon Kodiak Naturals Salmon Oil.

2. Mix until fully combined. The texture should resemble a thick meatloaf mixture.

3. Spoon or pipe mixture evenly into prepared muffin liners, filling about ¾ full.

4. Add a small dollop of pumpkin purée on top of each for an extra festive touch.

5. Bake for 20 to 25 minutes, or until fully cooked through and internal temperature reaches 165°F.

 

Allow to cool completely before serving.
Finish with a light pour of Kodiak Naturals Salmon Oil just before serving.
