INGREDIENTS
- 1 cup oat flour
- ½ cup natural peanut butter (xylitol free)
- 1/3 cup plain pumpkin purée or unsweetened applesauce
- 1 tsp Kodiak Naturals Salmon Oil
- ¼ tsp ground cinnamon
- ½ cup carob chips
- 1 tsp coconut oil
- 2-3 tbsp unsweetened coconut flakes
PREP
- Preheat oven to 350°F.
- Line a baking sheet with parchment paper.
- Measure all ingredients before mixing.
STEPS
- In a mixing bowl, combine peanut butter, pumpkin or applesauce, and Kodiak Naturals Salmon Oil. Stir until smooth.
2. Add oat flour and cinnamon. Mix until a soft dough forms.
3. Roll dough into 1 inch balls and place on prepared baking sheet.
4. Use your thumb or the back of a spoon to gently press an indent into the center of each ball.
5. Bake for 12 to 15 minutes, or until set and lightly golden on the bottom.
Allow to cool completely.
6. Melt carob chips with coconut oil in 20 to 30 second microwave intervals, stirring until smooth.
7. Spoon melted carob into each thumbprint center.
8. Sprinkle coconut flakes on top for a snowy finish.
9. Let carob fully set before serving.
